Immunity is a stat that prevents and removes certain effects (e.g. debuffs or ailments) or nullifies certain damage types. Immunity is typically worded as either Immune to X or Immunity to X.

Mechanics

The most common forms of immunity prevent ailments, but items such as the Eye of ChayulaEye of Chayula

Note that this should not be confused with Cannot be X; although similar, and often also referred to as immunity, this stat is more akin to avoidance and does not remove any existing effects.[1]

It should also not be confused with Unaffected by X or 100% effect reduction, which will cause the debuff icon to appear and affect the target, but have no actual effect. This is typically for situations where the debuff provides or enables a secondary beneficial effect.

Damage immunity

Damage immunity is a form of mitigation. It mitigates damage after damage taken as, and damage mitigated by immunity counts as 'prevented' damage for e.g. Untiring or Divine Shield. Damage immunity will not prevent non-damage loss due to e.g. Dark PactDark PactMinion, Spell, AoE, Chaining, Chaos, Nova

The Cannot take Reflected Physical/Elemental Damage modifiers are similar to damage immunity, though they apply both before and after damage shifts.

Monsters

Some bosses are immune to certain ailments or effects such as stun or knockback.

Some are immune to damage during certain phases of fights. Harbingers are immune to direct damage and are instead defeated by slaying their summoned monsters. Rare and Unique monsters are immune to fleeing.
